Description

Deliciously chocolaty muffins with peppermint and chocolate chips.

Ingredients
  • 125 g Unsalted butter (softened)
  • 125 g Castor sugar
  • 2 Eggs (beaten)
  • 2 tea spoon (tsp) Peppermint extract
  • 110 g Self raising flour
  • 15 g Good quality cocoa powder
  • Splash of whole milk
  • 50 g Dark Chocolate roughly chopped
  • 50 g White chocolate chips / white chocolate roughly chopped
Instructions
  1. Preheat the oven to 170 c
  2. Set out 10 muffin cases in Muffin trays
  3. In a free standing mixer cream the softened butter and sugar
  4. In a separate bowl stir together the flour and cocoa powder
  5. Add the mint extract to the beaten eggs and gradually add the eggs to the butter cream with a spoonful of flour to stabilize the mix.
  6. Gradually fold in the rest of the flour
  7. Add milk slowly until the mixture falls easily from a spoon / spatula
  8. Stir in the dark and white chocolate chips.
  9. Spoon the mixture into the 10 prepared muffin cases
  10. Bake in the preheated 170c oven for approximately 20 minutes or until the muffins have risen and set.
